Peace Fam! I hope this post finds you well. I have mentioned before that I have learned to really cook in this last few years. I have no formal training, I just love finding vegan recipes and seeing if I can make them for myself. Just this year, I made lasagna for the first time. Lasagna always intimidated me. I would purchase the boxed lasagnas in the past, but I always thought, I have to learn to make this someday. Finally, not only have I learned to make a decent one, it’s a vegan lasagna!

Instructions
- Cook beef crumbles in a large skillet over medium heat according to package instructions & season with dried basil/ oregano/ salt pepper to taste.
- Spread one-third of meat sauce in a lightly greased 11- x 7-inch baking dish; layer with 3 noodles and half each of ricotta cheese and mozzarella cheese. (The ricotta cheese layers will be thin.) Repeat procedure; spread remaining one-third of meat sauce over mozzarella cheese. Tightly cover baking dish with 2 layers of heavy-duty aluminum foil.
- Bake at 375° for 45 minutes; uncover and bake 10 more minutes. Let stand 10 minutes before serving. ( I baked until the cheese was melted).
