I hope this post finds you well. Finally, I wanted to post this awesome recipe for apple cider donuts. I found this recipe via My Darling Vegan. True story, I have actually made these donuts a few times, but I finally ate something before so I can take my time and capture better pictures. They are really just that good!
Baking is certainly not something I thought I would get into, but I am adding it to the list. I find it hard to get really great tasting baked goods that are also vegan. These apple cider donuts definitely fit the bill, however. I love the cinnamon taste and the unexpected spice. Before I became a vegan, I used to love those cake gas station donuts. However, those contain so many carbs and sodium that I am glad I found a better version.

- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp allspice
- 1/2 tsp salt
- 1/3 cup maple syrup
- 1/4 cup apple cider
- 1/4 cup apple sauce
- 1 tbsp canola oil
- 1 tsp vanilla extract
- Apple Cider Glaze
- 1 cup powdered sugar
- 2 tbsp apple cider
- Cinnamon Sugar Topping
- 1/2 cup granulated sugar
- 1 tbsp cinnamon
- 1/4 tsp nutmeg
Ingredients

- Preheat the oven to 350 degrees Fahrenheit. Generously grease a doughnut pan and set aside.
- In a small bowl combine flour, baking powder, baking soda, spices, and salt. In a separate bowl whisk together maple syrup, apple cider, apple sauce, canola oil, and vanilla extract. Add wet ingredients to dry and mix until just combined.
- Spoon or pipe batter into the prepared doughnut pan, filling each mold about 3/4 full.
- Bake for 8-10 minutes, until doughnuts springs back when gently pressed. Remove from oven and let cool in pan for a few minutes before transferring doughnuts onto a cooling rack to cool completely.
- To make glaze, whisk together powdered sugar and apple cider in a small shallow bowl. In a separate bowl, combine ingredients for cinnamon sugar topping.
- Once doughnuts have cooled, dip the tops of each doughnut into the glaze. Immediately sprinkle with cinnamon sugar.
- Let glaze harden and enjoy!
