
Vegan Chickpea Masala

Eating vegan can sometimes be hard if you don’t cook at home. Even when you cook often, like I do, it can be tough to switch things up with your recipes and try new things. I love eating Indian food, but it has been so complicated. I found this recipe it has quickly become one of my favorite vegan recipes.

Simple To Meal Prep
This recipe lasted for about a week, as I took it to work everyday. It got better with time, and all I needed was more rice. Not only is it dairy-free, It’s also a nut-free recipe, so if you are allergic to nuts, this is a healthy vegan option for you to try.

Fresh Ingredients
Full of fresh ingredients, you’ll need fresh ginger, cilantro, diced tomatoes, onion and garlic. This recipe also packs a ton of spice. Grab cheaper spices from your local Indian grocery store, if you can find one. You will need garam masala, along with tumeric and more. - 2 tablespoons olive oil
- 1 large onion finely chopped
- 2 garlic cloves minced
- 1 2 inch piece of ginger finely chopped
- 1 tablespoon Garam Masala
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons paprika
- 1 teaspoon turmeric
- ½ teaspoon cayenne pepper
- 3 oz cans chickpeas drained and rinsed, 15/ 425 gr
- 2 oz cans diced tomatoes 14.5/ 410 gr
- 1 oz can full fat coconut milk 13.5/ 400 ml
- 1 teaspoon cornstarch
- salt to taste
- Fresh chopped cilantro
Ingredients

- Heat olive oil in a large saucepan over medium-high heat. Add onions, a pinch of salt, and sautè until translucent, about 6 minutes stirring every now and then. Add garlic and sautè for 1 more minute.
- Add ginger and spices and sauté until fragrant, about 30 seconds.
- Add chickpeas and diced tomatoes, bring to a boil, lower to a simmer and cook for 15 minutes.
- Stir in coconut milk and simmer for 5 more minutes.
- In a small bowl whisk cornstarch with 2 tablespoons of water. Stir in the chickpea mixture and cook for 5 more minutes or until the gravy has thickened.
- Take a taste and adjust seasoning if needed.
- Remove from the heat, sprinkle with chopped fresh cilantro and serve.
